Garlic Mashed Cauliflower

A creamy flavorful substitute for classic mashed potatoes.

Ingredients:
  • 2 heads Cauliflower
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 4 cloves of garlic, minced (or 4 teaspoons)
  • Butter, optional

Optional Ingredients:
  • Chives or Parsley
  • 1/4 Parmesan Cheese
  • 1/4 cup plain Greek Yogurt

Tools:
  • 4-6 quart pot
  • Food Processor, Immersion Blender, standard blender
  • Serving bowl

Instructions:
  1. Prep the cauliflower but removing the outer leaves, and cut into florets.
  2. Place cauliflower in pot, add water to cover florets and cover with lid. Boil for 20-30 minutes or until cauliflower can easily be mashed between your fingers without feeling gritty. (This will help to make it creamy).
  3. Drain and add cauliflower back into the pot. Sauté for 3 minutes to remove excess water.
  4. Add cauliflower to food processor and set aside. Add 1 teaspoon of olive oil or butter to the same pot over medium heat and sauté the garlic until golden and fragrant, approximately 1 minute.
  5. Add garlic to the food processor and blend until smooth.
  6. Transfer to a serving dish and top with parsley, chives, parmesan cheese, or yogurt if desired.

Notes:
  • Cauliflower is not rich in starch the way potatoes are, removing as much water as you can is key to a smooth, creamy mixture.
  • You can skip the step with the sautéed garlic and use garlic powder if desired. The sautéed garlic will add a greater depth of flavor.
  • For an even creamier texture, add ¼ cup grated Parmesan Cheese and ¼ cup plain Greek yogurt.
  • If you do not have a food processor you can use an immersion blender or standard blender.
